Question by Cory: Easy tomato soup / macaroni & cheese recipe?
I’m living in Eastern Asia and there is many foods I am missing from home. Most of them I can readily buy in the supermarkets and hypermarkets, but two I haven’t found are Mac and Cheese and Tomato soup.
I am not an expert chef by any means, but are there any recipe’s you can offer me that I can try?
And please try not to be brand-specific, as many American brands are difficult to find 😉

Copycat of Woolworth’s Macaroni and Cheese

Cook – 7 oz package of macaroni
Melt – 8 oz Velveeta
1 stick Margarine
½ cup milk
Add-
4 oz sharp grated cheddar cheese
Stir In –
1 can cream of celery
1 cup mayonnaise (DO NOT USE SALAD
DRESSING)
Salt and pepper to taste

Cook until smooth on low stirring constantly.
Combine with macaroni and spoon into lightly buttered casserole.
Bake 15 minutes @ 350. Garnish top with pimento.. Woolworth used stuffed olives.

Baked Macaroni & Cheese

1/4 cup butter
1/4 cup flour
2 cups milk (I warm it up in the micro 2 minutes)
1 teaspoon salt
2 cups shredded cheese (recipe calls for American or Cheddar – I like using extra sharp cheddar)
8 oz. elbow pasta

Cook (omitting salt) and drain pasta – I undercook according to package by 1-2 minutes.

Melt butter over low heat, gradually add flour, stirring until smooth. Keep stirring and cook 1 minute. Increase heat to medium and gradually add milk. Cook until it’s bubbly – keep stirring. Add salt and cheese, stir until cheese melts.
At this point, you can add the pasta directly to the saucepan and eat it. If you have time, it’s worth the extra effort to bake it!
Stir everything together and bake in a 11×7 casserole dish at 350 for about 30 minutes.

You could also add some bread crumbs mixed with melted butter scattered across the top before baking

  2. Eastern Asia? Where? Anyway…get some regular mac, then make condensed soup and pour it over the mac. For tomato soup, look for Campbell’s. Should have.

  3. Wcanoodle’s baked mac and cheese is what I use; you can also sub cubed Velveeta in that, and add a bit of minced onion for flavor. Salt and pepper are essential. Alternative topping, sliced fresh tomatoes before going to the oven. Really easy to do.
