Creamy Tomato Soup
4 tomatoes – peeled, seeded and diced
4 cups tomato juice
1 cup heavy whipping cream
1/2 cup butter
salt and pepper to taste
Place tomatoes and juice in a stock pot over medium heat. Simmer for 30 minutes. Puree the tomato mixture and return the puree to the stock pot. Place the pot over medium heat, and stir in the heavy cream and butter. Season with salt and pepper. Heat, stirring until the butter is melted. Do not boil.

    gazpacho (I think) which is a tomato soup using fresh tomatoes. This is the
    cooked version :)

  4. Yes, actually it would be – I think that I would maybe not use the vinegar
    and add some more herbs – but even as is, it will be great on pasta.

  7. This soup will work hot as well I think – maybe without the cucumber (I
    don’t like cooked cucumber). Cold soup is strange initially if you are not
    used to it – but after a while it gets addicting – especially in the summer!

  8. Initially I wanted to make gazpacho but I was thinking that roasting will
    bring out a sweeter flavor of the vegetables. But yes, conceptually it is a
    roasted gazpacho!
