Question by Jo: How to make a basic chicory salad with mayonnaise and fish (smoked salmon or canned tuna or shrimp or plaice)?
Is it wrong to first cook the chicory in water before making the salad, so that the salad wouldn’t be crunchy?
Is it okay to mix the chicory with the mayo and some lemon juice? And herbs also?
What kind of fish would fit best to the salad?
What kind of herbs would fit best to the salad?
Would some lemon juice fit well with the salad?

chicory doesn’t really need cooking but you could blanch it before adding mayo and lemon juice.

  5. Chicory can be a bit tough, but I usually just chop it and use chicory (escarole or curly endive) as a bed for Tuna, Egg and Salmon salad. If you wish to add the chicory to the salad, chop it in small pieces and combine it with your tuna etc. If you wish to blanch the chicory to tenderize it, go right ahead. Blanch in boiling water for a few seconds then plunge into ice water to stop the cooking. Be sure to dry the Chicory before using it in a salad.

    I often make canned tuna or salmon salad my mixing the drained fish with chopped lettuce (chicory is fine), chopped cucumber, chopped bell pepper, chopped tomatoes, minced onions and 1 or 2 hard boiled eggs, dried or fresh chopped dill and mayonnaise. I am quite sure a squeeze or two of fresh lemon juice will brighten up the salad even more.

    Another favorite salad of mine is this Italian Tuna Salad: Start with canned drained cannelloni or other small white beans. Gently toss drained beans with drained canned/jarred Italian Tuna or solid white tuna. Dress with some olive oil, lemon juice and ground black pepper. Garnish with fresh chopped parsley and capers (optional). Rinse the capers with cold water if they are too briny. Serve over your choice of lettuce or other greens like escarole (chicory) or baby spinach. Chopped celery is also good in this tuna salad.
