Question by adieu: Looking for a good chilli recipe using fresh tomatoes.?
(In other words, no canned tomatoes. I am drowning in tomatoes here and my neighbors are saturated as well.)

Ingredients:

bay leaf
2-3 cups soaked beans (black or red)
4 tsp cumin
4 tsp oregano
4 tsp paprika
1/2 tsp cayenne
ground “New Mexico” chili powder (however much looks good, few tsp.?)
Gebhardt’s chili powder (however much looks good, few tsp.?)
1 chili negro or ancho
peanut oil
2 large onions, chopped
4-6 cloves garlic, minced
salt
ca. 4 cups tomatoes, chopped (fresh/peeled)
1-2 tsp chopped chipotle chili
1/4 cup red wine
1-2 Tblsp vinegar (wine, cider, rice)

Instructions:

Cover beans and bay leaf with 2 inches of fresh water, bring to boil.
Lower heat and simmer. Toast cumin and oregano over med. heat,
stirring so they don’t burn. When they’re fragrant, add paprika,
cayenne, and chili powders–toast a few seconds. Remove from heat.
Then grind with mortar and pestle. Dry the chili negro or ancho in a
hot oven (400) for a few minutes. Cool and remove stem, seeds, veins.
Shred it and then grind in food processor, blender, etc. Saute onion in
oil till soft, add garlic, salt, ground herbs and chili, cook 5 min.
Add tomato, juice, 1 tsp. chipotle, and some red wine, cook about 20
min. Add to the beans and add more water to cover beans by 1 inch.
Cook till beans are soft (1 hr.) Taste chili, add vinegar to taste.
Adjust seasoning (cumin, oregano, salt, chili powder, chipotle,
vinegar.)

If you can wait, it’s best to serve it a day later. Very good with
cornbread.

  8. You may be better off. It’s all dreadfully toxic at this point. Fish is only permitted to be served to kids and retirees maybe once a month in France now, and usually then in cake form with extenders only.

  9. Sane! You know, some people actually CANNOT eat certain foods! Brussels sprouts and the like stimulate a gag reflex in some (chemical problem with saliva mix), food intolerances do exist, and people do go through PHASES. A big fuss just bugs everyone, no one wins. My father had the gag thing yet took one piece, chewed and swallowed it with no fuss, then ate other things — he set a good example. Because I was not forced, I learned to love fresh beets as a kid and became a food bug!

  10. Thanks, I fully agree. We never make a fuss over anything at mealtime, that’s no time for trauma! We do ask that each thing be tasted in a very small amount, and counter to what Michelle Obama says, we dont make them eat it then send them to bed for making a fuss. No child deserves that.

  11. People go through food phases, often very long and tedious ones. I went for long years when I really didn’t care about quality or anything. It was just fuel. I just had to come around on my own, I guess.

  12. My French spouse used to be very “limited.” Finally, FINALLY, years later, he is Mr. Vegetable! Apparently he was a fussy eater as a kid and his parents sure are, but there isn’t necessarily a connection. I was taught to taste and chew and swallow a little bite, then say quietly, “I don’t care for this.” I was always excused from eating it. No trauma that way. Push them hard, and they tend to resist! sigh

  18. I know there are some kids that just refuse to try new things! It seems to get better as they get older – at least that has been my experience. My granddaughter is two and she used to eat absolutely everything. We were always shocked at how mature her taste buds were – from unsweetened latte to spicy stews. Amazing. All of a sudden – no more. She refuses to eat anything but fruit and raw vegetables. What can you do? Keep on trying! Thanks again Tess!

  19. OH thanks, I thought they were a tad younger than my grandson. He SHOULD love everything, we was born in the years we owned a restaurant and catering business, and has spent many an hour in my kitchen. My daughter’s two boys are just the opposite…give them Scampi and lobster’ no dish will scare them off! Haha.I just keep hoping he will come around. He has enjoyed several of your recipes, so I gotta keep trying. Tess

  20. Hey Tess! I missed you! My girls are 14 now and they have been raised with me in the kitchen! So they are used to eating all kinds of different foods. They are the worst critics I have so I test my recipes on them. It goes from “OMG” to “not your best cooking mother!” They are funny. I hope you are doing great lovie!

  22. Try it with chicken breast. Cut it into strips and pan sear it in a little bit of olive oil. Set it aside, make the sauce and place it back in the sauce at the end. I think that will taste great. Thanks for watching! I am happy you like the nutritional values. It does help a lot.

  26. My recipes don’t have measurements or anything so bear with me…

    Brown some ground beef, dice tomatoes, add to ground beef, add chili powder, can of red kidney beans, salt and pepper, chopped celery or mushrooms if you like. Cook until done.

  27. Why don’t you freeze some of the tomatoes? Blanche them in boiling water just long enough to loosen skins. Remove the skins and cores, put in a freezer bag and place in freezer.

    1 lb ground chuck
    1 large onion
    2 Cans Bush Chili Beans
    2 Cups crushed tomatoes
    1 can Beef Broth
    1 pack of McCormick chili seasoning
    1 dried Cayenne pepper

    Brown chuck and drain sautee onions and add remaining ingredients. Let simmer for 1 hour and remove the Cayenne pepper( unless you like it hot)

Diced tomatoes (about 16oz) two 8oz cans of kidney beans brown some “good” hamburger and saute two medium onions, two 6oz cans of tomato sauce. two cups of chicken broth. Salt, pepper and chili powder to taste. Simmer for two+ hours and enjoy. I made some yesterday and will have it for dinner tonight. It “always” tastes better the next day. My tomatoes gave out about a month ago. In Texas the 100+ heat everyday fried the plants. Send me some of yours!!!!!!
