Question by k: Substitutes for green pepper?
I’m cooking for my boyfriend for our anniversary and I’m making stuffed tomatoes. The recipe calls for green pepper, parmesan, and croutons, but my boyfriend despises green peppers. Is there anything I could put in instead?
I forgot to add that he doesn’t like any kind of peppers what-so-ever.

Just leave ’em out of his. Put them in yours if you like it.

  4. If he dislikes green bell peppers, he won’t like any bell peppers, not matter what the color. You can substitute almost any vegetable for the pepper if the filling is cooked before filling the pepper. I would try any of the following vegetable or a a combination of two.

    Slice or chopped Celery
    Cubed Butternut Squash
    Sliced Zucchini
    Green or Red Cabbage, sliced thin
    Fennel, sliced thin

    Check your local farmer’s or Green market or super market for more ideas.

  5. Congrats on your anniversary! I’m sure he’ll appreciate you cooking for him. Canned artichoke hearts would be yummy and easy to substitute for green peppers, especially with the parmesan cheese. Buy the ones that are quartered instead of whole. To make it extra creamy you could also put in a bit of cream cheese. Add some fresh garlic and the filling would be similar to a hot artichoke dip. Yum!
