Question by Emilia: Not very many things to eat, need a good vegetarian dinner?
There is almost NOTHING in my house at the moment. A little cereal, some artificial crap, a little cheese and crackers, some fruit (just a little), and *blehh* hotpockets, tomato soup, goldfish, chips, bread… I want to have a good dinner, though. I am really hungry and I want something that fills me so I’m not constantly hungry. Suggestions please? Just little quick DIY meals with simple stuff?

Just a tip: try not to eat between meals. Eat 3 full meals. Nothing in between. You can try eating rice with peanuts. its good. Or you can join a vegetarian dinner group.

  1. Right now, maybe you could have some tomato soup and a grilled cheese sandwich for dinner, some of the fruit for dessert, and then tomorrow, you can go shopping. And go ahead, be wild and toss some goldfish or crackers in your soup.

  2. We are both in the same boat. There is nothing in my house but tomato soup, junk food, bread, cheese, and ham. I say make the tomato soup and put a few goldfish crackers in there. Have a piece of fruit afterwards. If you get hungry during the night, have some cereal as a late night snack.

  4. Wow. Your cabinets sound like mine. I sometimes find myself just having a lunch of cheese singles on saltines. If you have milk you could add that to the tomato soup instead of water. Protein makes things more filling. If you have italian seasoning or basil flakes that’ll make it more tasty also. I like to put cheese (usually shredded) on a piece of bread and put it in the oven til its toasty and melty. Do you have any fresh veggies? Salads work even if no lettuce is available.

  5. This might sound odd or gross, but I once made a bread pudding which was savoury- out of soup and bread and cheese, and I baked it, it was very good.

    Butter the bread with mergerine or whatever you have, oil wouild oo, a little on each slice.
    Lay the slices- lots of them, into a deep small dish, in layers, cut the pieces to fit the dish. Butter the dish beforehand.
    Add grated cheese to each layer as you lay it down, and season with salt, pepper and dried herbs.
    If you have any nuts, like peanuts or walnuts, lay these down in between the slices too.
    If you have apples or pears, slice these and lay them in between the slices of bread.

    Then beat the tomato soup into a bowl with two eggs and a little cream or yoghrut.

    Pour the soup into the dish and bake in hot oven 25 minutes until the soup is soaked into the bread and the pudding wobbles.

    If you have no egg, it would work by using the cheese in the soup, rather that adding the cheese to the slices.
    As a bread savoury pudding this works, though I never did it with tomato soup. I used some other soup and it was very good.

    The great thing about making chili is that the leftovers freeze great. I freeze it in portion size then I have a great meal when I have no food to make anything or do not feel like making anything

    2 Cans refrigerated crescent dinner rolls
    8 Ounces PHILADELPHIA BRAND Cream Cheese — softened
    1/2 Cup MIRACLE WHIP Salad Dressing
    1 Teaspoon dill weed
    1/2 Teaspoon onion salt
    1 Cup broccoli flowerets
    1 Cup chopped green pepper
    1 Cup chopped seeded tomato
    1/4 Cup chopped onion
    1/2 Cup sliced pitted ripe olives optional

    HEAT oven to 375oF.

    UNROLL dough into 4 rectangles. Press onto bottom and sides of 15x10x1-inch
    baking pan to form crust.

    BAKE 11 to 13 minutes or until golden brown; cool.

    MIX cream cheese, salad dressing, dill and onion salt until well blended.
    Spread over crust. Top with remaining ingredients. Refrigerate. Cut into
    squares. Makes 24.

    TANTALIZING TEMPEH DINNER

    1/2 oz Dulse, dry
    3 oz Chickpeas — cooked
    3 oz Soybean sprouts
    3 oz Broccoli flowerets — in bite-
    -size pieces
    3 oz Tempeh — cut into 1/2-inch
    -cubes
    2 tb Soy oil
    1 t Onion — minced
    1 t Fresh chives — chopped
    1/4 ts Salt

    Preheat oven to 350 degrees. Lightly grease a 4 x8
    baking pan with soy oil. Soak and rinse dulse 2 or 3
    times in cold water. Combine with the remaining
    ingredients and mix well. Transfer to baking pan and
    bake for 20 minutes.

    Turkish Lentil Soup (Vegetarian)

    1/4 cup dried chickpeas
    1/3 cup bulgur
    1/2 cup green lentils; heaping measure
    6 cups water
    1 medium onion — thinly sliced
    1 1/2 teaspoons cayenne
    1 teaspoon salt
    1 tablespoon ground coriander seed
    1 tablespoon butter
    1/2 teaspoon dried mint

    Soak the chickpeas in water to cover overnight.

    The next day, drain the chickpeas and place them in a stockpot along with
    the bulgur, lentils, and water. Bring to a boil, then simmer the soup,
    partially covered, for 45 minutes.

    Stir in the onion, 1 teaspoon of the cayenne, and the salt. Cook 15 minutes
    longer. Add the coriander and simmer for 5 more minutes.

    Melt the butter and add to it the remaining l/2 teaspoon cayenne and the
    dried mint. Pour the soup into a tureen and pour the butter mixture on top.
    Serve immediately.
    Serves 4.
    Notes:This spicy, aromatic soup is guaranteed to perk up the
    bleakest winter day. Although it keeps well, the soup will be zestiest if
    served shortly after preparation
