  1. Agreed. I’ve seen this salad prepared differently. However, I think if you
take the basics of this recipe or essential ingredients, tomatoes, onions,
oil (EVOO and red wine vinegar always go together well), salt and pepper,
you have an ensalada chilena. Just like traditionally pastel de choclo is
traditionally made with beef, I use chicken instead because my husband is
Hindu and can’t eat beef, it’s still a pastel de choclo.

  2. I love Chilean sald…very simple but tasty

  3. Some people do it differently depending on the city they live, saying that
the way you do it is “the real chilean way”, is a little pretencious.

  4. I agree with Lorena A but I disagree of the fact that ensalada chilean is
sometimes seasoned with vinegar. In valparaiso we cut them extremely thin
and the the tomatoes are cut circular.

  5. can’t wait to try this recipe

  6. Agreed with you.

  7. Sorry but in real Chilean salad, the onion is cut extremely thin, almost as
thin as paper. Secondly, Chilean cuisine doesn’t include olive oil, just
vegetable oil, and finally Chilean salad is never seasoned with vinegar.
    Just oil and salt.

  8. Potato salad, mmm!

  9. Any type, as long as they are fresh (fresh veggies).

  12. spinach

    sesame seeds
    sliced strawberries

a slightly sweetened cider vinegar vinaigrette
