I have about 250 green tomatoes, I am hoping they become ripe enough to preserve them in jars soon.
What is the best way to preserve tomatoes in jars?

sterolize the jar in boiling water, wash the tomatoes, put them into the jar, then seal the jar with a small piece of plastic coated in vinegar & a rubber band

    This is a pretty standard website. I’m not sure if they tell you on this site but if you have a tomato with a lot of slimy “guts” it is much better to squeeze that stuff out. After blanching just smash some of the stuff out. That’s why Romas are the best for canning.

  2. Why use jars? Tomatoes freeze like a dream.

    I like to scald them and remove the skins. Then I put them in freezer bags and lie them flat to freeze. Perfect.

    I’ve never canned tomatoes. Long ago I remember reading about how tomatoes were trickier to can than many other things. They are easier to end up with botulism.

Since your tomatoes are not ripe yet, you have plenty of time to either buy a book on canning, the Ball Blue Book is good, or go to the library and check some out before you attempt to preserve anything since if it’s done incorrectly it can cause serious illness or death.
