Question by kathy_is_a_nurse: Green tomatoes still on vine… 1st freeze coming… Want to pick what can be used… Is there too green?
In other words, for green tomato recipes, are there any green tomatoes that should NOT be used because they are too green?

  1. As long as the tomatoes have reached their full size they are safe and tasty for eating green.

    My favorite is plain old fried green tomatoes.

  2. Actually the entire vine can be brought indoors and hung upside down in a location that will not freeze, and they will ripen. In the meantime they are never too green to enjoy. They can be sauteed with onions and butter, added to good old-fashioned tomato soup, and more.
