Question by Who am I?: what to do with all these garden tomatoes?
I have plants of my own PLUS a coworker gave me more! I’ve been eating tomato and cucumber salads on end. Will be making BLT’s tonight. I don’t have canning supplies. That’s the bad thing about harvest time, it all comes at once and you can’t spread it out over the year! Anyway what can I do to use or preserve these?

  1. you could make green tomato chutney or red tomato chutney. You could also clean them and freeze them in bags ready for soups/casseroles in the winter :)

  3. make tomato sauce or tomato soup and just freeze in small containers. or make gazpacho. you can roast tomatoes and eat with poultry or other roasted veggies. and give away baskets of tomatoes to your neighbors.

  4. You can freeze them.
    They can be used frozen for cooking only, though, not for salads, because they lose their shape when thawed. Instead of waiting for them to unfreeze for cooking, you can grate them (while frozen) coarsely and use them for sauces, broths and whatever else you like to cook with tomatoes.

    If you want to peel the frozen tomato, just submerge it for 1-2 minutes in boiling water, and it will be really easy to peel.

  5. Besides sharing with other people who could use them…with those that you keep, make Cheesy Spinach stuffed tomatoes…..yum..

    Use tomatoes in chili (can freeze after cooked)….

    Can add as toppings to eggplant – zucchini bruschetta boats (along with diced peppers, onion, basil if you want)…here’s a great recipe from Kraft:

  6. Put a table at the end of your drive and sell them. Locals in my area do this all the time. They put a few tomatoes into a bag and sell the bags for $ 1 each. You just drop your money into a coffee can on the table.

    If you have freezer space, just wash the tomatoes and allow them to dry. Put them into a ziploc bag and put into the freezer. You can cook with these later. Just thaw them, the skin will pull right off, and toss them into your spaghetti sauce or whatever. When you freeze like this, they are to soft and mushy to just eat, but they are great to cook with.

  9. do you you have a freezer? You can peel and freeze whole tomatoes on a cookie sheet and once they are stiff, put them in freezer bags. You cannot use them for salad but you sure can use them for soups, stews, chili, spaghetti sauce, anything that would benefit from home grown tomato flavor.
    I had back surgery during garden time one year and my husband and mother took care of my produce for me and it was a quick way to preserve a bunch of tomatoes without all the complications of canning them properly.
    I would take out how ever many tomatoes I wanted and put in a bowl. They thawed rapidly and I would then chop them or mash with my fingers and added them to what ever i was making.
