I love vodka and tomato sauce for pasta, or cointeau chocolate moose. But am looking for new ideas to try. What are your favourite recipes with alcohol in them?

  1. The lady in the video mentions using one 28 oz can of tomatoes for a pound of pasta. Anyone find this is too little tomatoes? I did this with some angel hair recently and it felt like it was too little sauce, barely coating the pasta.

  5. A soffritto is an Italian version of the French mirepoix. There really isn’t any set measurement, it all depends on how much you want to make. For something like this, I’d use one red onion, one carrot and one stalk of celery, all finely minced and then browned in virgin olive oil.

  12. Thats just basil leaves that go dark from the canning/cooking process. I take them out and add fresh at the end of cooking a quick sauce, or add some during the cooking and at the end of a long cook sauce. Way better than dried.

  34. Add a good measure of port wine to any redberry sauce for deserts for extra kick.
    Red wine is nice in a risotto dish.
    Cheese on toast where the cheese has been soaked in a rich darkn ale overnight is very tasty and decadent.
    I have a friend who has beer instead of milk on breakfast cereal… I am dubious as to how nice this is.
