Question by Jessica: what is a good recipe for tomato sauce?
with a little spice to it to put over tortellini? i usually put a cheese sauce over my tortellini but i want a tomatoey sauce this time. i have a can of tomato sauce, what spices should i add?

garlic salt ,oregano, parsley & sugar!!!

  1. I like garlic, basil, oregano, and a little chervil. I also like some zip, so I like to add a little crushed red pepper flakes. You’re only using 1 can of sauce so go easy if you add the flakes. Start with 1/4 tsp, and taste. Adjust if necessary.

  2. Bolognese sauce

    * 3/4 pound lean ground beef
    * 1 yellow onion, chopped
    * 3 tablespoons tomato paste
    * 1 teaspoon harissa
    * 1 tablespoon Worcestershire sauce
    * 1 (15 ounce) can tomato sauce
    * 1 teaspoon pressed garlic
    * 1 tablespoon mascarpone cheese
    * 1 pinch dried basil

    1. Crumble the ground beef into a large skillet over medium-high heat. Add onion and cook, stirring to break up large chunks, until no longer pink. Drain off excess grease. Mix in the tomato paste, harissa and Worcestershire sauce until blended. Stir in the tomato sauce and garlic; reduce heat to low and simmer for 15 minutes.
    2. Stir in the mascarpone cheese, and simmer for another 15 minutes. Remove from the heat, and season with dried basil.

  3. Spices are not the same as herbs–but I think you mean herbs. I don’t mean to be vague about this but do what suits you personally. Be creative!

    The general list of suspects are parsley, oregano, basil, fennel seed and fresh or powdered garlic. But, then you can add things like onions, chopped bell pepper or pimento, chopped olives, celery and pepperoncini peppers or pepper flakes as well as a tiny pinch of ground cloves which imparts a warm taste and aroma. Even Balsamic vinegar or red wine and a bit of sugar can be added.

    Bottom line, are you looking for a simple or complex flavor and do you want it to be semi sweet or savory?

    You can’t go wrong with any of these ingredients–just make the combination that pleases you–but always use oregano and make sure you have cheese to top your sauce with.
