Question by 1/4midgetracingmom: Looking for a oil and vinegar dressing to mix with tomatos and cucumbers?
We went to a banquet and there was a tomato and cucumber salad with just a olive oil and vinegar dressing….anyone know what its called or how to make it?

4 roma or vine ripe tomatoes
1 medium cucumber
2 tbsp balsamic vinegar
1 tsp extra-virgin olive oil
1/4 tsp sugar
2 tsp chopped fresh basil
Freshly ground black pepper to taste
Preparation:
Slice tomatoes and cucumber thinly and place in a medium bowl. Combine vinegar, oil and sugar. Drizzle over sliced tomatoes and cucumber. Toss, then sprinkle with chopped basil. Refrigerate or serve at room temperature.

they tend to serve this a lot in thai restaurants….you can order it to go for lunch at times there..i do.

this recipe didnt call for onions i always add red onions..another lady i know adds the olives makes it more medettranian ok spelling on that..lol

Along with tomatoes and melon, this salad includes feta soaked in mint oil, radishes, and cucumbers.

  1. 1/3 cup olive oil
    1/4 cup fresh lemon juice
    1 tablespoon distilled white vinegar
    1 1/4 teaspoons salt
    1 teaspoon ground cumin (Optional)
    1/2 teaspoon black pepper
    3 3/4 lb vine-ripened or plum tomatoes, cut into 1/3-inch dice (4 cups)
    1 lb seedless cucumber (usually plastic-wrapped), cut into 1/3-inch dice (2 1/2 cups)
    3/4 cup finely chopped fresh curly parsley (from 1 bunch)
    1/4 cup finely chopped onion (preferably sweet onion, such as Vidalia or Walla Walla)

    Whisk together oil, lemon juice, vinegar, salt, cumin, and pepper in a medium bowl. Add tomatoes, cucumber, parsley, and onion and stir to combine. Let stand at room temperature 10 minutes before serving.

    If you don’t care for onions you can omit them as well, but they add such a wonderful flavor.

  2. My dad makes a mixture like this one but the ingredients are below:

    tomatoes
    cucumbers
    vandalia onions
    canola oil
    white vinegar
    sugar
    water

    Dice the tomatoes,cucumbers, onions and put in a bowl.
    Then in a mixing cup put about half and half of the canola oil and vinegar (equal amounts). Then throw in a pinch of sugar and add the water. ( about 1/2 of the amount of the oil or vinegar that you used). Mix well.

  4. I usually just mix olive oil, vinegar, salt, pepper, and sugar to taste. Some people like it a little milder, some like it a little tangier.

    Another really good salad is cucumbers, sliced raw onions, and a dressing of sour cream, vinegar, salt, pepper,a nd sugar. It is SO good.
