Question by foodie: What to make with Campbells Creamy Rancher Tomato Soup.?
I have a can of Campbell’s Creamy Ranchero Tomato soup. Do you have any idea’s what I can make with it.
I have noodles, tuna fish, and some chicken.

Campbell’s Ranchero Enchilada Casserole

1 can (10-3/4 ounces) Campbell’s Creamy Ranchero Tomato Soup
1/2 cup water
2 cups cubed cooked chicken
4 flour tortillas, cut into strips
1/2 cup shredded cheddar cheese

Mix soup, water, and chicken.
Stir in tortillas.
Spread in 2 quart shallow baking dish.
Top with Cheese.
Cover.
Bake at 350 degrees for 25 minutes or until hot.

Yield: 4 servings

  1. Looks delicious! Did you remove the bay leaves before blending?

  2. You could cut down on the potatoes if you want a thinner soup – one small
    potato would give a little body without making it too starchy. Add some
    Parmigiana would give a great flavor! I think all of her golf and tennis
    playing helped keep Dinah in great shape…you’re right about Rosie
    Clooney!

  3. Those home grown tomatoes would be excellent in a salad.  The uglier
    tomatoes frequently taste the best. Looks like a very good recipe, perhaps
    a little starchy for me so I might use less potatoes or a little less rue.
    Of course I might add a little Parmigiana cheese. Dinah Shore liked to cook
    a lot of food, while the great Rosemary Clooney liked to eat a lot of food.

  4. Psst.. the top of the blender has a clear cap that you can remove when
    blending hot things.. just cover it with a cloth while blending.. no
    explosions! BTW, this soup sounds great!
