Question by Shelby: Can I substitute lasagna noodles for pasta sheets?
When making lasagna, is it okay to use actual lasagna noodles instead of pasta sheets? I’ve only ever seen it made with lasagna noodles, but the recipe I’ve found suggest pasta sheets instead. Is it okay to use the noodles?

  2. Do you mean those wide-ribboned noodles, approx. 1″ wide?
    They are usually slightly thinner than lasagna sheets, therefore do not absorb the same amount of moisture lasagna sheets absorb.
    If you use those lasagna noodles pls. ensure that the sauce(s) you use are thicker than usual. No big deal with a bechamel, but any tomato or meat sauce should be reduced a bit more prior to assembling the layers.

  6. Most definately! Once you start using the noodles I’m pretty sure you will never go back to sheets. We call them lasagna noodles but actually there are many wonderful things you can do with them besides lasagna. You can use any “stew” “ragu” “sauce” of your preference but you can also use them as roll ups and stuff with any meat, fish, poultry or vegetables of choice. It really makes life easy when you have family or even guests for dinner and they have specific likes and dislikes. First you make the noodles and should you decide again the favourite lasagna container with only one or two sauces will not quite do for the occasion you can easily split it up into two, three or even four smaller dishes – any more than that make something else, depending on your fillings. (You know there’s usually someone who wont eat the meat but loves fish & vegetarians seem to be forgotten in a large gathering also those who refuse to eat mushrooms, spinach or onions & certainly garlic sometimes). If you roll them up you are coming close to a canneloni but you only need to use 1/3 or 1/2 of the lasagna strip for each roll up & still need to cover them with your sauce of choice for reheating. The fillings can all be pre-cooked.
