Question by Kevin: How do I make marinara sauce from scratch?
I’ve looked through Yahoo! Answers and searched the web for recipes, but all of them involve the use of canned tomatoes. Does anyone have a recipe that uses fresh tomatoes instead?

MARINARA SAUCE

1 (28 oz.) can Italian tomatoes
1 (6 oz.) can tomato paste
4 tbsp. chopped parsley
1 clove garlic
1 tsp. oregano
1 tsp. salt
1/4 tsp. pepper
6 tbsp. olive oil
2/3 c. diced onion
1/2 c. dry white wine (optional)

Place tomatoes with juice, tomato paste, parsley, garlic, oregano, salt and pepper in a blender or food processor container. Process until smooth. Heat olive oil in a 12 inch skillet over medium heat. Add onions and saute 2 minutes. Add tomato mixture and wine. Reduce heat and sI’mmer 30 minutes, stirring occasionally. Yields 4 cups.

  18. This is how I do it.
    Olive oil goes into the pot. You add basil, chopped onion, diced garlic cloves, pepper, salt, bay leaves, and diced celery. Put on a medium heat and stir coating the veg and cooking until soft. Dice about 10 roma tomatoes and put about 1/2 in at this point. Stir. Add some red wine, about 1 cup. Stir. Add some more basil.
    At this point the tomatoes should be half cooked and there will be some liquid in the bottom of the pot. Add two cups of water and the rest of the tomatoes. Lower temp low, cover and let cook for about 2 hours. Stir every ten minutes to make sure it doesn’t burn, adding more basil, wine and chunks of Romano cheese when needed. If it isn’t as chuncky or red as you like it add more tomatoes, but not after the first hour.
    This makes enough for 2 libs of pasta.
