Question by ann46: Does anyone have a recipe for frito corn salad?
I’m looking for a particular recipe that uses chili-cheese fritoes, rotel tomatoes with green chilies, shredded cheddar cheese, and sweet whole-kernal corn. Basically, I think that’s the recipe, but I don’t know what – if any – dressing or if there are any other ingredients.

2 cans yellow kernel corn, drained
1/2 red bell pepper, sliced and chopped
1/2 green bell pepper, sliced and chopped
1/2 purple onion, chopped
1 cup mayonnaise
1 cup shredded cheddar cheese
5 ounces of chili cheese flavor Frito corn chips

Mix all the ingredients except the chips.
Add the chips in before serving otherwise the chips will get soggy.

    I tried this at a Christmas bunch the quilt guild had. I had to hunt down the one who brought this in and get the recipe.

    1 cup shredded cheddar cheese
    5 ounces of chili cheese flavor Frito corn chips
    Mix all the ingredients except the chips.
    Add the chips in before serving otherwise the chips will get soggy.
    Red peppers are expensive so you can just use green instead.

  2. Frito Corn Salad

    2 cans whole kernel corn, drained
    1 cup finely chopped purple onion
    1 can rotel tomatoes with green chilies, drained
    1 cup finely chopped green bell pepper
    2 cups shredded cheddar cheese
    1½ cups Hellman’s/Best Food’s mayonnaise*
    1 pkg. Chili-Cheese Fritos

    Directions: Mix all ingredients except Fritos and chill. Just before serving, add coarsely crumbled Fritos and mix together.

    * You could also use a mixture of mayonnaise and ranch salad dressing.
