Question by Lou: What side dish or casserole can i make with broccoli, zucchini and sun dried tomatoes?
Im leaving town for a week and I have broccoli and zucchini in the fridge. I don’t want them to have to throw them away. Im having baked garlic chicken for dinner. What can i make as a side using broccoli, and zucchini. I also have a jar of sun dried tomatoes that may go well with it.

Roasted Broccoli and Zucchini
Ingredients
2 cups of fresh broccoli
1 large zucchini
3 cloves of garlic
2 tbsp of extra virgin olive oil
Add other seasonings to taste
Directions
Preheat oven at 400 degrees. Slice zucchini in medium sized slices. Mince garlic. Add all ingredients in a large bowl. Shake very well and spread out on a baking sheet. Roast in the oven for 20 minutes.
Number of Servings: 4
