Question by springy: Using regular tomatoes instead of sundried tomatoes?
There are some recipes for tomato scones using sundried tomatoes but I would prefer to use regular tomatoes. Just wondered what difference it would make to use the regular tomatoes instead.

Hi it probably wouldn’t be a good idea. It would make them very soggy and wont be near as sweet. You can dry your own tomatoes if youd like to give it a try. Just cut then in wedges some salt pop them on a rack and put them in the oven on a very low temp for a couple of hours :) good luck :)

  1. The tomato liquid will make your scones soggy as it bakes. If you peeled, and seeded the fresh tomatos that would help; but you would need to dice them very small. The idea behind the sun-drieds, is the impact on the flavor profile from such a scant amount of product; as well as the eye appeal of the (diced) sun-drieds in the scones. I wouldn’t recommend substituting fresh for sun-dried; however, no recipe is written in stone. you can experiment, but that is costly and time consuming.

  2. The taste will be completely different, fresh tomatoes have too much liquid therefore ruining your dish.

  3. Fresh tomatoes and sundried tomatoes don’t taste at all alike.

    Fresh tomatoes will not hold up in a scone dough.

  4. Flavor and texture will be different.
