Question by LoveJesus: What is a yummy white sauce recipe or a brand of good white sauce to use instead of Tomato or Red Sauce?
I LOVE Italian food. My Mom hates it because she hates red sauce. I hate alfredo sauce. She likes it. She also won’t eat a cheese sauce. I need a white sauce that might taste good with Traditional meals such as spaghetti, chicken parmesan and pizza. Or if you have a recipe for these items with white sauce that would be nice. I am responsible for cooking and she is so picky and does not like anything I like. I would appreciate any help.

  2. I can of cream of mushroom soup. 1 half can of heavy cream. couple of garlic cloves, crushed. black pepper. basil, a couple of shakes, brown garlic gloves in a couple of tablespoons of olive oil(reg. oil is fine) add ingredients add a little water( to break any salty taste) cook low until desired consistency. optional: add can, drained peas to mixture when cooking. Add, shredded cheese if you desire afterwards, either mozzarella or Parmesan. You said you hate Alfredo, so perhaps you both might enjoy this. You also could add pre sliced mushrooms to the garlic and cook them both before adding other ingredients.

  3. FIRST you are a great daughter to cook for your Mom, she is blessed to have YOU.
I love white sauces and they are so easy to use by adding different things to it.

To start out making 1 cup take:

    2 tablespoons butter or margarine
    2 tablespoons all purpose flour
melt in a pot on medium heat and stir until it’s like a paste
Then heat up 1 cup milk and pour over the butter flour mixture
stir and cook until thick on low heat.
Add a pinch of salt and black pepper
Here are some ideas what you can add for different flavors
you decide what you want from these as follows:
    (A)
    sauteed onions
    chopped celery
    sauteed mushrooms
    (B)
chopped green Chiles mild ( small can found on Mexican isle at grocery store)
chopped red peppers pimentos mild ( small glass jar found in canned food isle at grocery store)
grated cheese such as Monterey Jack, white mild cheddar or Colby
    Chile powder
    cumin
    (C)
    nutmeg grated
    parsley washed and chopped
a few drops of hot sauce like Tabasco

    Best wishes,

  4. spaghetti: clam sauce (is good, not as bad as you would imagine) or PESTO cause!! For pizza, sautee onion and TONS of garlic in a bunch of EVOO and put it ontop! Use the same thing for spaghetti with cheese and broccoli/zucchini/chicken/beef. Fresh basil makes allll the difference on italian dishes! garlic powder as well.

  5. Firstly, to make a good white sauce, you need to know how to do a roux. I’m currently in my advanced year of cookery school.

    INGREDIENTS :
    One button onion
    3 whole cloves
    bay leaf
    75 grams of butter
75 grams of flour, Plus extra just incase
    1 Litre of Milk.

    METHOD:
Put milk in pot, attach the bay leaf to the button onion by using the cloves like drawing pins, heat milk, the onion bay leaf and cloves will flavour it really nicely.
Completely melt butter. When foaming, add flour. Stir in until it becomes fully incorporated and slightly grainy. Cool it down.
When cool, add HOT milk to the COLD roux, a wee bit at a time, stir well. discard the onion.
Cover with baking paper to prevent a skin forming, and now you need to cook it 45 minutes,(to cook out the flour taste) On a pan filled with a bit of water, to prevent burning on the bottom. Low heat.
After 45, remove baking paper, taste, season it with salt, and pepper if you don’t mind speckles of pepper in there.
If too thick for your liking, Heat up more milk, and add.
Your bechamel sauce is done! Trust me, this is the proper recipe :)
The sauce should be glossy :)

  6. I have to agree with Brandi R.

    Olive Garden Alfredo Sauce
    1 pint of Heavy Cream
    1 stick of butter
    2 Tbsp. Cream Cheese
    1/2 – 3/4 C. Parmesan cheese
    1 tsp. Garlic powder

    Methods/steps
In a saucepan combine butter, heavy cream, and cream cheese. Simmer this until all is melted, and mixed well. Add the Parmesan cheese and Garlic powder. Simmer this for 15 – 20 minutes on low. You may wish to season with a little salt and pepper. I have done this with half and half, but we prefer the heavy cream. But I wouldn’t try it with plain milk.

let the sauce simmer about an hour or so.
You can add shrimp or cooked chicken to this white sauce ! and pour over Pasta
