Question by LineQ: Does anyone have a good recipe for can tuna. Maybe for a sandwich or salad?
I will fix tuna for dinner, and I want it to be something different. I want to know how I can make a good tuna sandwich or salad without eggs (I don’t like boiled eggs). I have a bunch of seasonings, vegetables, and even fruit. Thanks for the recipe.

Mix in a can or 2 of cream of mushroom soup or any cream soup you have on hand

  1. Here are a couple of ideas for your canned tuna:

Drain the oil or water from 2 cans of tuna. Flake out the tuna into a bowl. Add 1/4 cup mayonnaise (not Miracle Whip) and a dash freshly grated black pepper and 3 chopped small gherkin pickles. Now here’s where you can get creative: Add any combination of the following:

Finely chopped bell pepper (green, red, or yellow)
    Finely chopped onion
    Minced garlic
    Finely chopped jalapeno
    Finely chopped celery
Finely chopped zucchini or yellow squash
    Chopped cherry or grape tomatoes
I’d also add some fresh herbs. The ones which go best with tuna are tarragon and dill.

Now, for a non-mayonnaise type tuna salad:
To your drained tuna, add your favorite Italian dressing or your favorite vinaigrette (again, 1/4 cup per 2 cans of tuna), and go with your choices of the above listed veggies and viola! there you have it.

You can serve either of these tuna salads on bread, in a lettuce bowl (bibb lettuce works especially well), or in a large, hollowed-out tomato or in a small halved cantaloupe or honeydew melon.

I’d accompany my salad with some good cheese, such as Reggiano or Havarti, some fresh fruit and a slice of chocolate cheesecake. (Okay, I threw in the cheesecake because I want some right now, but you choose your own dessert).
