Question by Kathleen: Sun Dried Tomato Bruschetta – how long can I keep in fridge after opening?
I have opened a jar of Trader Joes’s Sun Dried Tomato bruschetta – best by April 12/2012. Does that mean I can keep it in the fridge till then?

Keep it covered in oil and it will last for quite some time, just use a clean utensil to use it, as bacteria is the worst enemy of processed foods.
No once opened you normally should use up within say four weeks & store in the fridge.
