Question by richard: What is a good tomato sauce recipe?
I have lots of red tomatos ready to use and all the equipement for making it.

First wash out them. Chop them. and put them in a pot. add some salt. leave it on the stove with a low flame. it should become waterless during heating.(It may take you 6-7 hours). bring them out and put them in a leach. press them to bring the whole sauce out. put the sauce in the pot again and let it boil. Whenever you mentioned that the raw smell is gone, it is ready to serve.

    FRESH TOMATO SPAGHETTI SAUCE

    1/4 c. vegetable oil
    2 lg. onions, chopped
    2 cloves minced garlic
    1 lg. green pepper, chopped
    12 c. fresh tomatoes, peeled
    3 (12 oz.) cans tomato paste
    3 tbsp. sugar
    1 tbsp. salt
    3/4 tsp. pepper
    3 tbsp. oregano
    2-3 bay leaves

    Heat oil in large kettle and cook onion, garlic and green pepper until tender. Add remaining ingredients, stir well after each addition. Simmer uncovered for 45-60 minutes. Remove bay leaves. Meatballs may be added now and cook for 30 minutes. This sauce freezes well

  2. You should blanch and shock the tomatoes first, then take out the seeds and pull off the peel. Then, puree them and add salt. Be careful if you puree them in a blender because they will be hot. If they are acidic, add a little bit of unsweetened cocoa powder and they won’t taste acidic. Once you have the puree, you can add whatever seasonings you like, or Italian seasoning if you don’t feel particularly creative. If you want, add meat. If it tastes like it’s lacking something, I sometimes add honey. Neither the honey nor the cocoa powder give a definite taste if you don’t add too much; in fact, most people are really surprised to find out that they’re my secret ingredients.

  3. My husband likes my chili with fresh tomatoes. Normally I’d use 2 big cans of stewed tomatoes and a can of tomato paste.

    2 lb ground turkey, beef, chicken, browned
    2 pks McCormick Chili mix
    2 cans dark red kidney beans
    at the last minute, say 30 minutes, add a tablespoon of unsweetened powdered cocoa

    I either serve it with cornbread, or I put down (on each plate) corn chips first, ladle chili on top, sprinkle with cheddar jack cheese, add lettuce & tomato and top with 1/2 fat sour cream.
