  7. I read that you are to use new lids each time, and put them in very hot water, not boiling, before putting them on the jar, or else it messes up the sealer.

  8. Actually we did 8 bushels so it was 140 jars altogether.

  9. Wow 70 jars …. I only canned 4 Qts & 1 Pt. this time .I have heard of big Italian family’s… but you must be feeding a small army. I did add spice & some kosher salt to the sauce & a teaspoon of salt to each jar… also 2 Tbsp of lemon juice I mashed The Tomatoes w/ a potato masher while cooking I tasted it … it was tasty will be good with Italian Sausage .

  10. Where I am from Italy we don’t do it this way. We quarter the tomatoes and feed it through the electric machine which gets rid of the peel, pit and skin and then we add salt to the sauce which is put into jars with some basil. Once the jars are ready we put it in a big steel drum which can fit 70 jars and we light a fire, bring it up to a boil and let the jars boil for half an hour. Then we let it cool and put it away later on.

  11. Thank you for this video I am getting ready to make & can your spaghetti sauce now I have a quick question how long did you cook the sauce for before you started to put it in the jars

  25. buy the stuff in a jar

  26. Baked Ziti

    1 T Olive Oil
    ½ lb. lean ground beef
    1 Cup chopped onion
    2 garlic cloves, minced
26-30 ounces jarred marinara sauce (prefer home made)
1 8 ounce can tomato sauce
    1 tsp dried oregano
16 ounces Ziti – cooked 8 minutes and drained
    15 ounces ricotta cheese
2 cups shredded mozzarella cheese, divided
    ½ cup grated Parmesan cheese

In a large skillet heat oil over medium high heat, add beef, onion and garlic. Cook 3 minutes, stirring frequently. Stir in spaghetti sauce, tomato sauce, and oregano. Bring to a boil, then remove from heat.

Combine 1 cup sauce mixture with the ziti. Spoon half of the ziti mixture into a sprayed 9 x 13x 2 casserole dish; top with all the ricotta, 1 cup mozzarella, 1 cup sauce, remaining ziti mixture and remaining sauce.

Cover and bake @ 350 for 20 minutes. Sprinkle with the remaining 1 cup mozzarella and the Parmesan. Bake uncovered 20 minutes longer or until heated through.

  27. My grandmother used to do elbow macaroni and diced tomatoes with the juice, salt and pepper. Sounds boreing, but its really good

  28. The quickest and easiest way is to cheat! Buy some spaghetti and a jar of pasta sauce (I use Prego) and some frozen cooked meatballs. All you need to do is boil the pasta, thaw the meatballs in the microwave and add to the sauce and simmer. (I have a toddler and a baby so this is what I usually do)

  29. toss togeather a salad.

    can of black eyed peas
    can of artichoke hearts
    diced tomatoes
a few squirts of italian dressing/or creamy garlic dressing
    some salt and pepper
and some pasta like elbow, or go for a real salad and use torn up salad greens instead when the mood hits you.

It’s best at served alittle warm, room temp, or chilled, and even tastier if you let it sit, chill, for an hour or so.
