Question by Lindsay Kind: Need easy recipes to use up meatless spaghetti/tomato sauce?
One thing I want to add: NO GRAINS! No pasta, bread, noodles ect. Any other recipe will do. My niece is avoiding carbs.

I’d prefer something that involves chicken drumsticks (since I’m currently craving it) but any other recipe will do. It can be vegetarian, it doesn’t have to be.
Can I get some more meat recipes?

you can make eggplant parmesan. i’ve never made it but i heard its delicious!

  5. Eggs in purgatory, heat it up ina skillet and poach eggs in it.

    Make a bun less pizza burger with pizza type topping and some cheese.

    Depending on howmuch you have, add some carrots, onions, muchrooms, artichoke hearts, olives, onions and so on a d alittle chicken broth and you have soup.

  6. You can use in chicken parmesan. To avoid carbs, just don’t bread the chicken. Use boneless chicken breasts, add to skillet with olive oil and cook. Then add the sauce and sliced mozzerella on the top.

    Another idea is to make Italian chicken. Cook chicken in skillet with olive oil along with sliced portabella mushrooms. Use boneless thighs for this one:

    In a casserole dish, add the chicken along with the mushrooms. Then cover with your sauce. (I would add some garlic powder and onion powder) Top with shredded mozzarella or Italian lend cheese. Bake in oven at 350 for 20-25 minutes.
    I usually serve this over spinach noodles, but I am sure you could use cooked/boiled cabbage leaves instead for your niece.
