  1. I like Cherry Tofu wraps.

    You saute firm tofu and ginger until the tofu turns golden. Then you remove it from the heat and toast some almonds.
    Next combine shredded carrots, dried tart cherries, the tofu and ginger mixture and the almonds in a bowl. Squeeze some lime over it and mix in well. Add salt and pepper to taste.

    Then take 6 latge lettuce leaves and spoon some of the mixture onto each one. Wrap the lettuce leaf all the way around and use a toothpick to hold it shut.

    They are very very yummy.

  2. Grilling is always the best option, especially during the summer. Try top serloin skewers injected with Baby Rays Honey Teryaki, while brushing it with the same. Add some onions, mushrooms and peppers. Add some cheesy potatoes (velveeta works best with those), a tossed salad with Italian dressing and jalapeno cheese bread, and you got a winner. I make that every Saturday, and my friend list just keeps growing.

    If you’re doing something romantic, make chicken fetaccini alfredo from scratch. Make the dough, cut it into small/medium slices, make the alfredo from scratch, add some basil, grill (not fry) the chicken, add some fresh ground pepper, a dash of salt and whatever seasoning you want (pepprika works great), and serve it with store bought breadsticks filled with cheese and marinara sauce… Served over candle-light…always a winner!

    It’s amazing I’m single… I should have been a chef, but that’s what I get for being on the road 9 months of the year HAHAHHA!

  3. I really like fresh large (never frozen) Prawns sauteed in butter, olive oil, fresh tarragon, and red wine. With a splash of lemon just after cooking.

    Not too far from where I live is, a fish market that has Alaskan king salmon flown in overnight. I like to wash it well in fresh water and then pat it dry.
    I then coat it with a good Salmon seasoning and place it in a boat i make out of aluminum foil. Then I pour a can of Campbell’s chunky vegetable soup over it and close up the boat around it. I bake it at 350 deg. for about 35 to 40 minutes. Then I remove the salmon from the boat and discard the soup. I only use it for the flavor but you can eat that too if you like. I serve the salmon with a white sauce made from cucumber, tarter sauce, and artichoke hearts blended smooth. It’s sooooo yummy.

    pork chops
    1-2 green bell peppers
    1 larger onions
    garlic
    Catalina Dressing
    You can put it the slow cooker for a good 6 or more hours or on the stove for at least 3 1/2 hours. It is soooo good!!

  5. Here are my favorites.

    Hamburger Pie

    1# ground beef
    1/2 c. chopped onion
    2- 16oz cut green beans, drained
    1- 10 3/4 oz condensed tomato soup
    1/4c. of water
    salt and pepper to taste
    3 med potatoes, peeled and quatered
    1 beaten egg
    milk
    1/2 c. shredded chedder cheese
    Cook hamburger and onion till meat is browned and onion is tender; drain off grease.
    Stir in beans, soup, water and season with salt and pepper.
    Place mixture in a pan.
    Cook potatoes in salted boiling water about 20 min or until tender; drain. mash while hot; stir in egg. Add enough milk to make potatoes fluffy, yet stiff enough to hold their shape. Season with salt and pepper.
    spread potatoes on top of meat mixture. Sprinkle with cheese.
    Bake, uncovered, in a 350 degree oven for 25-30 minutes.
    makes 4-6 servings

    Simple Pot Roast

    pot roast
    potatoes-peeled and cut into chunks
    baby carrots
    canned whole green beans-optional
    can of cream of mushroom
    lipton onion soup envelope
    soup can of water
    place roast in roasting pan, place veggies around roast, mix soups and water and pour over roast and veggies. cook for about 1-2 hours, depending on size of roast. 400 degree oven. serve biscuits to sop up gravy… Can also cook this in a crock pot for 4-6 hours on low

    Saturday Chicken
    5 servings
    10 chicken pieces
    (you dont have to use that many chicken pieces. Use how many pieces you want. the rest of the recipe stays the same.)
    1 can condensed cream of mushroom (or cream of chicken)
    1 cup of cream (dont cheat and use milk; the cream makes a lot of difference)( ihave cheated and used milk lol, it still tastes good, but the cream does make a difference)
    salt, garlic powder, and paprika- to taste
    chopped parsley
    Season chicken with salt, garlic, and paprika. Next, spread it out, in one layer baking pan. Dilute the soup with the cream; pour it over the chicken, and sprinkle parsley on top.
    Bake , uncovered, at 350′ for 1 hour or until juices run clear when chicken is pierced with fork.
    Makes a delicious gravy. Serve with mashed potatoes or buttered noodles or rice.

    This casserole is absolutely delicious. Sometimes I fix the
    hashbrowns by themselves as a side dish for supper.
    Hashbrown Potato/Sausage Casserole
    1 pound Brown & Serve link sausages (I prefer maple flavor)
    2 pounds. frozen hashbrowns potatoes, thawed
    10 oz pkg cheddar cheese, grated
    8 oz. sourcream
    1 can cream of celery
    1 tsp. salt
    1 tsp. pepper
    1/2 stick butter, melted
    Brown sausage, and set aside. Mix all other ingredients together. Put in greased casserole. Bake at 350′ for 45 minutes. Remove from oven, and place sausage on top. Cook for another 15 minutes. You can also use lil smokies or beef smoked sausage or kielbasa pieces instead of link sausages.
