Question by Saurus: i need a recipe using chicken breast and ham?
ham instead of bacon. i heard you can wrap bacon around chicken so i wanna use ham instead. i also have chopped tomatoes and basil, is there a recipe where i can put these all together?

hello to you ham and chicken make a mock codon bleu debone the chic flatten out and rool it up with ham and swiss cheese inside use your toms and basil for a sauce oh yeah bake the breasts

  13. Try this:

    Bone the chicken and carefully slice into it to make a pocket.

    Chop up ham, tomato and basil. Mix them with some bread crumbs, chopped garlic, and a bit of olive oil and stuff them into the chicken.

    Roll this in more breadcrumbs and bake.

    Sprinkle a bit of chopped toimato and basil on top and serve

  14. lay a slice of ham flat and cover with a layer of your favorite cheese, grated, and a pinch of black pepper, then place the chicken breast on top and wrap the ham around it, secure with a cocktail stick. take your tomatoes and chop them roughly, then place them in a baking dish with the basil around the chicken breasts and ham, put into the oven for thirty minutes at 170 and then check by slicing into one of the wrapped breasts at the thickest place..you know what cooked chicken looks like. This way the meat juices and any of the cheese that leaks from the parcels ends up in the tomatoes and basil which will make a delicious sauce and to which, if you want, you can add a couple of tablespoons of cream a the end or half a glass of white wine at the beginning..or both.
    Serve with noodles or pasta or baked potatoes and salad.

  15. Italian Chicken with Pesto Potatoes

    3/4 cup balsamic vinegar
    4 skinless, boneless chicken breast halves
    4 1/2 ounces sliced mozzarella cheese
    salt and pepper to taste
    4 slices Parma ham
    1 pint cherry tomatoes
    1 tablespoon olive oil
    1 pound small potatoes
    2 tablespoons prepared basil pesto

    Preheat oven to 400 degrees F (200 degrees C).
    In a saucepan, bring the vinegar to a boil. Reduce heat, and simmer 15 minutes, stirring frequently, until thickened.
    Cut a pocket in each chicken breast. Fill each pocket with an equal amount of mozzarella cheese, and season with salt and pepper. Wrap each chicken breast with a slice of ham. Arrange the wrapped chicken breasts in a baking dish. Place the tomatoes around the chicken, sprinkle all with olive oil, and season with salt and pepper.
    Bake 25 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.
    In a saucepan with enough lightly salted water to cover, boil the potatoes 15 minutes, or until tender. Drain, return to the pan, and coat with the pesto.
    Place chicken breasts, tomatoes, and potatoes on serving plates, and drizzle with the reduced balsamic vinegar to serve.
    Serves 4.

  16. Chicken Cordon Bleu
    4 skinless, boneless chicken breast halves
    1/4 teaspoon salt
    1/8 teaspoon ground black pepper
    6 slices Swiss cheese
    4 slices cooked ham
    1/2 cup seasoned bread crumbs

    Preheat oven to 350 degrees F (175 degrees C). Coat a 7×11 inch baking dish with nonstick cooking spray.
    Pound chicken breasts to 1/4 inch thickness.
    Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
    Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

    You could make a sauce to serve with it using the tomatoes and basil if you wish, but I think it would be better served on the side as the flavor might overpower the cordon bleu.

  17. MEAT PARMIGIANA

    Ingredients

    * Tomato sauce:
    * 1 1/2 cups chopped onion
    * 4 cloves minced garlic
    * 1/3 cup margarine or olive oil
    * 1 quart stewed tomatoes
    * 1 quart tomato juice
    * 4 (6oz.) cans tomato paste
    * 1/2 cup snipped parsley
    * 2 tsp salt
    * 3 Tbsp crushed oregano
    * 1/2 tsp crushed thyme
    * 1 tsp crushed basil leaves
    * 2 cups dry wine or sherry
    * 2 cups water
    * Chicken:
    * 6 boneless skinless chicken breasts
    * 1/2 cup of chopped ham (skinless)
    * 1/3 cup butter or margarine
    * 1 cup bread crumbs
    * 1/2 cup grated Parmesan cheese
    * 2 eggs slightly beaten
    * 1/4 tsp salt
    * Dash of pepper
    * 8 oz. sliced or grated Mozzarella cheese

    Directions

    1. Saute onions and garlic in margarine using a kettle of at least 4 quarts.
    2. Add stewed tomatoes, tomato juice, tomato paste, parsley, salt, oregano, thyme, basil, wine or sherry, and water.
    3. Simmer for 4 hours.
    4. Preheat oven to 400°.
    5. Melt butter or margarine in a baking dish (13x9x2 inches).
    6. Combine bread crumbs, Parmesan cheese, salt, and pepper.
    7. Dip chicken pieces and ham in beaten egg, then in crumb mixture. Arrange in baking dish.
    8. Bake for 15 minutes, turn the pieces over and bake 15 minutes more.
    9. Pour 3 cups of Tomato Sauce over meat.
    10. Top sauced meat with Mozzarella cheese; reduce heat to 350°.
    11. Continue baking for 30 minutes.
    12. Serve over pasta.
