I know a white wine is probably a good option, but would any red wines work? What about rose?

Pinot Grigio, Chardonnay (French, as Aussie or Chilean are too sweet) Poully Fume,Pouilly Fuisse any good Burgundy Blanc, Beaujolais Blanc, Muscadet( preferably “Sur LIe”) Sauvignon Blanc (aussie) if it`s a rich sauce…Sauternes, Tokay 2 puton yos, not more as it will kill the sauce…

I would stick with white wine IMO, some Chardonnay maybe? But If you want to go for red then maybe some Chianti. Heard Chianti goes well with some Italian Dishes. Hope this helps =)
