Question by Eura *spat out Plath & Pinter*: What vegetables can I add to make my salad more interesting?
Obviously vegetables that taste fine when eaten raw. So far I’ve got: lettuce, cucumber, tomato, grated carrot parsnip beetroot and radish. What other raw vegetables would taste good and be healthy to add?
I’m only looking for suggestions of vegetables, not fruit or nuts or anything else.

well, it’s not a veggie, but small cubes of apple work good in some salads.

  6. Raw spinach, Artichokes, Broccoli, Red chicory, Leeks, I like cherry tomato’s, Mushrooms, Shredded cabbage, Onions, herbs, Jicama.

  7. Celery , and green onions really help to give a salad some interest. Chop up just a little to your green salads and it makes them jump with flavor. Nuts like walnuts can give it some different texture. You can add apple and cheese to a romaine salad with the walnuts. Feta cheese with a vinaigrette will make it come alive . Add a little oregano to give it a exotic taste.Some people even rub their bowl with garlic if the main dish allows.

  9. Try artichoke halves, roasted red peppers, and mushrooms–the non-vegetable

  10. Pepperoncini peppers and black olives go very nicely in a salad!! With an Italian/vinegarette style dressing….

    Ya know…like Olive Garden! Mmmm….

  12. asparagus, apples or grapes. diced pecans or manderin oranges. Bell pepper sliced onion.

  13. snow peas, edemame (soybeans), red onion, celery, parsnips, broccoli, cauliflower…you can also use different types of lettuces rather than just iceberg or romain such as; Arugula, Radicchio,Spinach and, Watercress

  14. Beet leaves, parsley, chives.
    have you tried boring iceberg lettuce with fresh mint sauce…?

  15. peppers
    grated carrot
    how bout some salted peanuts (i know they are not veg but are great in a salad)
    celery
