Question by kayla c: Vegetarian restaurants in Florida? And also Tomato soup ingredients!?
I neeeeeeed another option other than chain places. I need variety!

Also, I went to Applebees up in Gainsville and I ordered the tomato soup but the waitress said that she knew specifically that the chef puts beef broth in the recipe. Is this normal in tomato soup?? I don’t get it!

I believe there is chicken broth or something broth in the tomato soup.

    sauce, we do not just cook tomato but we have to simmer it to reduce the
    liquidity of it.

    Adding Recipe

    Ingredients
    1 (14-ounce) can chopped tomatoes
    3/4 cup extra virgin olive oil
    Salt and freshly ground black pepper
    1 stalk celery, diced
    1 small carrot, diced
    1 yellow onion, diced
    2 cloves garlic, minced
    1 cup chicken broth
    1 bay leaf
    2 tablespoons butter
    1/4 cup chopped fresh basil leaves
    1/2 cup heavy cream, optional
    Directions
    Preheat oven to 450 degrees F.

    Strain the chopped canned tomatoes, reserving the juices, and spread onto a baking sheet, season with salt and pepper, to taste, drizzle with 1/4 cup of the olive oil and roast until caramelized, about 15 minutes.

    Meanwhile, in a saucepan, heat remaining olive oil over medium-low heat. Add the celery, carrot, onion and garlic, cook until softened, about 10 minutes. Add the roasted chopped canned tomatoes, reserved tomato juices, chicken broth, bay leaf and butter. Simmer until vegetables are very tender, about 15 to 20 minutes. Add basil and cream, if using. Puree with a hand held immersion blender until smooth.

If you have an iPhone or iPod Touch, there’s an application called Vegan Xpress that lists vegan options at chain restaurants. There’s also an application called Veg Out which requires WiFI and will tell you the nearest vegetarian restaurants.

    As for why companies use beef or chicken stock to make what should be vegetarian soups, you got me. At places like Applebee’s, there is no “chef”, just line cooks who open cans and pouches and heat the food up.

    Anyway, if you’re in the Orlando area, check out Dandelion CommuniTEA Cafe, an vegetarian and very vegan-friendly restaurant. My famiily knows when I visit them that a trip there is an absolute MUST.
