Question by THOMAS C: Does anyone know of a low acid tomato sauce recipe?
My wife lost her recipe for a great tomato sauce recipe that was low in acid, and it was great! You could have a lot and it wouldn’t upset your stomach. Anyone out there know what I’m talking about?

I find that the acidity is lowered as it cooks for longer periods at a low temperature. I also sauté onions and doing so caramelizes them so that the sugars cancel out some of the acidity. You can add a tsp of sodium bicarbonate (baking soda) but this may add a funny taste. Here’s my recipe:

1/4 cup olive oil (use more if necessary)
4 medium onions (diced)
1/4 cup thyme
1/8 cup basil
1/8 cup oregano

24 cloves garlic

8 cans Tomatoes (Roma or plum)

1. Heat olive oil (medium heat)
2. Add herbs to oil – heat for no more than 15 seconds
3. Add diced onions and sauté (lower temperature if necessary) for about 8-12 minutes.
4. Crush garlic through garlic press (or chop finely – this may take a while so do it before hand) and add to onion and herb sauté for no more than 1 minute.
5. Add cans of tomato. Bring to boil while stirring. After boil is reached, turn down heat to low or to simmer.
6. Stir every 10 minutes for the next 2-3 hours.
7. Puré and bring back to almost a boil stirring the entire time.

This recipe can be reduced to half. Further reduction is not recommended (why make so little sauce given the effort).

  1. I do know what you are talking about and the key to getting the acid out of tomato products is sugar. When I make marinara sauce I always add a couple of tablespoons of sugar along with a pinch of baking soda.

  2. I have been on the purple pill for stomach problems for years. I don’t know how scientific this is but I add 2 tsp of white sugar per 1 qt of tomato sauce.Someone told me about this remedy years ago and I have not been bothered with acid reflux problems after eating the acidic tomato sauce. You may Enjoy the slight touch of sweetness and tomato taste as well.

  3. I have actually heard that yellow tomatoes have a lower acidity. But as far as using regular tomatoes, I don’t know about making it low acidity otherswise as tomatoes are loaded with acids, and cooking it more doesn’t make sense.

    Also I know you can add a pinch of sugar to tomato based products to help balance the acidity, but I don;t know about the effect it would have on your stomach.
