Im looking for a good healthy tomato sauce recipe to go with chicken and pasta..

2 tablespoons olive oil
1/2 medium onion, finely chopped
1 small carrot or 1/2 large carrot, finely chopped
1 small stalk of celery, including the green tops, finely chopped
2 tablespoons chopped fresh parsley
1 clove garlic, minced
1/2 teaspoon dried basil or 2 tablespoons chopped fresh basil
2 pounds of fresh tomatoes, peeled, seeded, and chopped
1 teaspoon tomato paste
Salt and black pepper

Heat olive oil in a large wide skillet on medium heat. Add the chopped onion, carrot, celery and parsley. Stir to coat. Reduce the heat to low, cover the skillet and cook for twenty minutes, stirring occasionally until the vegetables are softened and cooked through.

Remove cover and add the minced garlic. Increase the heat to medium high. Cook for garlic for thirty seconds. Add the tomatoes. Add the tomato paste and the basil. Season with salt and pepper to taste. Bring to a low simmer, reduce the heat to low and cook, uncovered until thickened, fifteen minutes. If you want, you can push the sauce through a food mill to give it a smooth consistency.

  3. grill your chicken then chop into bite pieces put aside.
    make penne pasta with a little virgin olive oil mix into a pan add fresh oregano ,salt, white pepper and garlic powder or fresh minced garlic cloves. when you can smell it cooking add in fresh baby spinach and cut in half baby tomatoes.don’t stir but toss add chicken in and half a can of tomato sauce. serve.

  5. CREAMY TOMATO SAUCE

    1 pint heavy cream (heavy whipping cream is fine too)
    1 can tomato paste (6 oz)
    1 12 oz can tomato sauce
    1/4 cup butter

    Melt the butter and add the tomato sauce. Stir.
    Add the cream and tomato paste. Stir again. Heat through, but do not allow to boil.

    BASIC ITALIAN TOMATO SAUCE

    1 lg. onion, diced
    2 cloves garlic, minced
    1 can tomato paste
    2 lg. cans tomato sauce
    1 c. water
    1/3 c. sugar
    Salt and pepper to taste

    Cook onion in a small amount of olive oil until onion is golden but not brown. Add garlic and saute 3 minutes longer. Add the tomato paste, tomato sauce, water, sugar, and spices; bring to a simmer very slow until the sauce is thick and a deep red.
    Makes about 2 quarts.

    CHUNKY TOMATO SAUCE

    2 tbsp. olive oil or salad oil
    1 lg. onion, chopped
    1 clove garlic, minced
    1 can (1 lb. 12 oz.) plum tomatoes, undrained
    1/2 can (6 oz.) tomato paste, about 4 tbsp.
    2 sprigs parsley, chopped
    2 tsp. sugar
    1 tsp. salt
    1 tsp. dried oregano
    1/2 tsp. dried basil
    1/4 tsp. freshly ground pepper

    To make sauce: In large heavy saucepan heat oil over medium-high heat. Add onion and garlic. Saute 2 minutes. Add tomatoes and their liquid, crushing tomatoes into small pieces. Add tomato paste, parsley, sugar, salt, oregano, basil and pepper. Bring mixture to a boil, reduce heat and simmer, uncovered, 30 minutes, stirring occasionally. The sauce should be reduced to about 3 cups

    OR

    SPICY TOMATO SAUCE

    8 fresh plum tomatoes
    3 whole cloves garlic (chopped)
    1 sm. onion (chopped)
    1/2 c. dry white wine
    1 tbsp. basil
    1 tsp. oregano
    Salt and pepper (to taste)
    Olive oil
    3 c. water
    Tabasco sauce (to taste)

    Parboil and peel tomatoes, cut in 1/2 and remove seeds and chop them up. Chop garlic and onion
    In a saucepan add olive oil to cover bottom of pan. Over medium heat fry garlic and onions (be careful not to burn them!). Add chopped tomatoes, basil, oregano and salt and pepper. Bring to boil. Add wine, bring to a boil again. Add water, bring to boil. Lower heat and simmer for 5 minutes. Add Tabasco sauce to taste. Stir well.
