Question by Kristi: I have a lot of green tomatoes that I need to pick before the first frost comes.?
Will they still taste good if they are picked green? What do I need to do so that they will ripen?

For them to finish ripening can be determined on how developed they are, if they are a shiny green, they should ripen. Ripe fruits such as tomatoes, bananas and pears give off ethylene gas, which is a ripening hormone. Place one of these that are ripe in a paper bag or cardboard box with your green tomatoes to help them ripen up. Just don’t want to store them in to cool a spot or areas of real high or too low humidity..sunshine does nothing to ripen a fruit so no window sill space is needed.

    go from this book, but this one’s a winner.

  13. There’s always the option of fried green tomatoes or pickling them. A 94 yr old just told me,” wrap each one in news paper and put them in a cool dark place.” I’ll try that. I got tons of tomatoes this year in my Straw Bale Garden. My vines are still heavy with them here in southern Indiana. Got my kitchen sink full and need to do something with them. Canned a lot, froze a bunch, got a colander and pick’n basket full in the frig. Gave away by the bags full. Weirdest thing I had no appetite for them this year. Crazy. Must be sick. ha

Why don’t you pick up some burlap sacks or similar material, a little bendable garden divider things, surround each plant with the dividers, warm them with the burlap on the sides, and just keep them protected and toasty until they ripen a little bit? I’ve seen people do this. Southern Calif., we don’t have frost, exactly, but it DOES get cold..I’ve seen people do this with some plants, though.

    Pardon my ignorance with growing tomatoes..but in general, keeping them buffered against the elements seems like a way to give them a little bit more time..?

    The same thing happens to me when I make a big vat of Split Pea or Black Bean soup..I crave it..until it’s been bubbling on the stove for hours. Then I can’t even look at it. You should make SALSA!

  15. They will ripen if you keep them in a paper bag with a banana or other ripened fruit – they need the gas given off to ripen and they’ll taste fine; just keep checking them for signs of mould.

    I’d much rather use them to make green tomato chutney – I was looking forward to making it this year, and then all but 2 of my tomatoes ripened because of the early autumn sun. Can’t win them all.
