Question by just julie: I am making vegetable soup with beef. How to get the meat tender?
I am searing the roast and want to boil it and then add the vegetables and tomato juice. Any other suggestions?

Simmer it for about 3 hours…or put it in a crock pot; high for 4.

  1. If you sear it, you’ll get the edges of the small pieces hard. You can just cut it in small cubes (across the grain) and let it simmer in the soup – assuming the soup will be simmering for a couple of hours or so….

  2. dice it small and simmer it in broth for 2 hours before adding veggies
    veggies cook quick but the meat needs time

  3. you should try and cut it up, or next time use stewed meat, it comes chopped up already… and if you simmer it with onions and bellpeppers and some extra virgin olive oil first as if you are browning the meat. and let that simmer for about 30/45 mins, or until tender and then start adding your chicken stock and tomato juice, and cook that on med heat for another few hours. it will melt in your mouth!

  4. The key is to just cook it for a long long time. 3-4 hours I recommend before you make the soup. Then, add that meat to your soup and simmer for another hour or so, with the veggies/potatoes, etc.

    Chop up your meat, season it, brown it a little in a pan, then boil it in a bit of beef stock, dash of vinegar, garlic and some salt/pepper for 3-4 hours.

    Then, make your soup.

  5. Chop into bight sized pieces and after browning simmer gently for about 1 hour per lb and then add more stock/water and veggies.
    The less tender the beef, the longer it requires to cook.
