Question by professor grey: What to serve with meatballs when you don’t want to eat pasta or bread?
I know, it sounds strange but I have a phenomenal meatball recipe and I love the meatballs, I just don’t feel like eating it over pasta or making a sub. I’m trying to drop a couple of pounds so if you could help me out it’d be appreciated.

Just eat it like that with some sauce. Serve yourself a little bit of rice, not too much since rice is the most fattening.

  2. Turn your meatball recipe into a meat loaf. Serve with mashed or oven browned potatoes, salad and what ever you would serve for dinner.
    Turn your meat ball recipe into burgers. Although that is going to be served with bread it is a bit different than a Sub sandwich.
    Make little meat balls and drop into soup, much like the Italian Wedding Soup.

  3. The obvious is staring you in the face. Eat the meatballs as is. What’s so strange about having a phenomenal meatball recipe?

  4. Tossed salad with any veggies you would like to put into it. My favorite is ice burg lettuce, tomatoes, salt, pepper, sometimes a little onion, with salad dressing.

    A hot veggie as a side dish.

    Even a baked potato or mashed would go well with meatballs.

  5. I’d serve them with cooked cabbage (sort-of Hungarian-down-home style).

    Saute some chopped onion in butter, dripping or oil, add roughly-chopped cabbage. Add half a teaspoon of paprika powder and salt and pepper to taste. Just barely cover with chicken consomme or water and add a small, finely-diced, peeled potato. (Options: caraway seed, a piece of green or red paprika, fresh or dried dill, smoked paprika powder, fresh or dried garlic, 1 dessertspoon tomato paste, or any seasonings you really like.) Cook on simmer until the potato is soft. Thicken with flour & water, or cream, or sour cream.

    Enjoy!

  8. Since your goal is to drop a few pounds, I would stick with vegetables. Smothered cabbage; smothered squash; brussel sprouts; green beans with a few new potatoes; smothered okra; black eyed peas or Lima beans; steamed cauliflower and broccoli. After you decide on your “main” veggie, I would serve with some baked sweet potato fries and a side salad.
