Question by Bill: my brisket of beef is too dry. It is already cooked. How can I add moisture?
I cooked it for 31/2 hrs. in the oven covered with onion, celery, and carrot and a large can of tomato juice. It came out really dry. I want to salvage the dish if possilbe.

debone and use as cooked beef in a casserole or add to a vegetable stew. Brisket is better cooked as a pot roast sounds like it cooked too long in oven. I would suggest for future to use dutch oven or slow cooker/crock pot

I am assuming it is a plate brisket and has short ribs attached if it is trimmed and just plate or point brisket it is usually smoked or corned when sold fresh will often have the top cut with portion of rib.

  1. Too late to add moisture to the meat. Make some delicious gravy to go over the top of it.

  2. You probably bought a trimmed brisket. That was your mistake. There is not much you can do other than making gravy from the drippings. I have been slow cooking and smoking brisket for about 15 yrs. and made the same mistake. You should always, always, always buy your brisket untrimmed.The untrimmed fat acts as a natural baste and will keep your meat much juicier. You will probably need to ask the butcher if he has some behind the counter. They almost always trim them for display and sale. To the first answerer, brisket has no bones.

  3. Hmmmm…..shred your brisket and toss with your favorite barbecue sauce for “pulled brisket sandwiches”. I’m thinking that your brisket was overcooked by about 2 hours. You can also put it in tamales, or even a beef and barley soup. Consider a vegetable beef shepards pie for extra zing.
