Question by idwa: Is it possible to can oven-dried tomatoes?
I’ve seen recipes that call for simply adding oil to the tomatoes, but is there any processing necessary (e.g. canning in a water bath or pressure cooking)?

Edit: To clarify, I’m not talking about the store-bought dried tomatoes that are completely dried out, but rather grape or cherry tomatoes “dried” in the oven on low heat for a few hours until they’re shriveled but still retain moisture.

If they are dried, you do not need to can them. That is the reason for drying them. Put them in Zip-Loc bags. That is double trouble to do both.

  9. I dried tomatoes in the oven last season, and put them in a zipper bag and stored in the freezer. Just another idea and you won’t have to worry about if they are good or not. Just take out what you need as you need it.
