simply slice the toms in eighths or smaller–not strips for use in sandwiches–you’ll lose the innards. I found it best to put screening on the tables when dehydrating anything. Especially good for the small seeds. Just make sure it is stainless steel and you won’t have any probs. cloth screens just don’t work as well.

  1. Can’t really make “sun dried”, but you can make dried or dehydrated. The best tomatos to use for dehydrating are roma or plum tomatos. Your dehydrater should have a guide telling you approximate times, but taking a look each day will help you know. If you are going to bag them and really dry them out, they will look shrivled up and should be the consistancy of potato chips. If you are going to can them and pack them in oil and herbs like you see in the stores, they should have a little more give to them, like the dried apricots or pinapple you see in the store.

To prep them, you should wash them and remove any stickers, it helps to pat them dry. Then slice them, your slices want to be a 1/4 to a 1/2 inch, thicker takes a bit longer, but if you cut it too thin, they will stick to the grates and may be hard to get off, especially if you a drying all the way.
